No Noodle Lasagna

2 Tbs Três Pontas Extra Virgin Olive Oil
2 Cauliflour Italian Pizza Crusts
1 lb Organic Ground Chicken Breast
(can also use ground turkey or beef)
1 -1 1/2 cups Rao’s Tomato Herb Sauce
1 cup Shredded Mozzarella Cheese
2 1/2 Tbs Italian Seasoning
Preheat oven to 375 F.
While oven is heating, combine your ground chicken breast with 2 Tbs Italian seasoning. Coat bottom of your pan with 1 Tbs Três Pontas EVOO and cook ground chicken breast until brown.
Lightly coat your lasagna pan or casserole dish with 1 Tbs Três Pontas EVOO and then layer 1 crust in pan or dish and top with 1/2 of the ground chicken breast, marinara and mozzarella (and spinach leaves, optional). Then top with the second layer (same as the first layer). Sprinkle remaining Italian seasonings on top of cheese.
Bake in oven until Cheese is melted, about 12-15 minutes. Enjoy!
*I slightly defrosted the crusts in the microwave for 30-1 minutes to be able to manipulate them well into my round pan.
