1/4 cup Três Pontas Extra Virgin Olive Oil
1/4-1/2 tsp Sea Salt
1/4-1/2 tsp Cracked Black Pepper
2 Chicken Breasts
3/4 cup Pistachios, shelled
Preheat oven to 400 F. Place chicken in a baking dish. Combine the olive oil, sea salt and pepper in a small bowl. Stir until incorporated and then pour evenly over the chicken. Place 1/4 cup of unshelled pistachios in a nut grinder and grind until all 3/4 cups have been ground slightly. (You do not want a powder.)Then sprinkle evenly on top of the chicken. Bake for 25 minutes, then turn over and bake for another 20-25 minutes until chicken is cooked thoroughly. Serve with vegetables, like green beans or a salad. Enjoy!
