Quick Cauliflower Rice with Chicken & Veggies
1 Tbs. Três Pontas Extra Virgin Olive Oil
1 package Cascadian Farms Riced Cauliflower Blend (can use others or create your own)
1 cup zucchini quartered
1 cup squash quartered
1/2 cup yellow pepper, cut into pieces
(if using plain cauliflower rice, then do the same with red and green pepper and onions)
1 cooked chicken breast, cut into small pieces (can add an additional one if more protein is desired)
1/2 tsp sea salt
1/4-1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp basil
1/4 tsp red pepper flakes
In a small bowl combine the sea salt, garlic, oregano, basil and red pepper and stir until incorporated and set aside.
Heat 1 Tbs of Três Pontas Extra Virgin Olive Oil in a pan over medium-high heat and add all the above ingredients including the seasoning mixture. Make sure to distribute it evenly over the rice mixture. Cook on medium high heat for 9-12 minutes, stirring occasionally until the cauliflower and veggies are thoroughly cooked. Serve and enjoy!
