Quick Veggie Burger
1 tsp Três Pontas Extra Virgin Olive Oil
2 Amy’s Organic Sandwich Rounds
1 Hilary’s World’s Best Veggie Burger
Handful of Arugula
1 slice Monterrey Jack Cheese or
2 Tbsp Shredded Mont Jack Cheese
1 tsp - 1Tbsp Mayo (mix with a few drops of sriracha depending on the level of spiciness you like)
Heat 1 teaspoon Três Pontas EVOO in a small sauté pan. Cook frozen patty on medium heat for 3 minutes on each side.
Either toast sandwich rounds from frozen in a toaster or toaster oven on a medium setting or you can defrost the rounds in the microwave for 30 seconds and place in sauté pan for 30 seconds to 1 minute on each side.
Place the cheese on one sandwich round and heat in sauté pan until slightly melted (keep an eye on it so it doesn’t overlook round)or in microwave for 20-30 seconds.
Finally, build your veggie burger by placing round with cheese on the bottom and top with veggie patty, arugula, mayo and sriracha mixture and second sandwich round.
Serve with veggies, sweet potato fries or a side salad (like arugula salad-recipe on website). Enjoy!
