Simple Arugula Salad with Lemon Vinaigrette

1/2 pound fresh arugula (3 large bunches)
1/2 cup freshly squeezed lemon juice (2 lemons)
1/4 cup Três Pontas Extra Virgin Olive Oil
1/2 tsp sea salt
1/4 tsp freshly ground black pepper (or half-cracked)
chunk of parmigiano-reggiano cheese
Preparation:
If the arugula has roots attached, cut them off, then clean your arugula using Fit Organic produce wash. Spin dry the leaves and place them in a large bowl.
In a small bowl, whisk together the lemon juice, Três Pontas olive oil, sea salt and pepper. Pour enough dressing onto your arugula to moisten.
Toss well and place on individual salad plates. Use a vegetable peeler to shave small pieces of the parmiagiano-reggiano cheese on top and add some additional sea salt flakes (to taste).
