Stuffed Peppers

1-2 Tbs Três Pontas Extra Virgin Olive Oil
1 bag Trader Joe’s Roasted Bell Peppers & Onions (Or 1/2 cup chopped peppers and 1/4 cup chopped onions)
1 lb ground beef (chicken or turkey)
2 tsp Voodoo Spice (Available at World Spice, can also buy at Whisk in Bellevue) 
Sea Salt (to taste)

Preheat oven to 350F. Line a deep baking dish with parchment paper or coat lightly with Três Pontas olive oil. Place peppers (without seeded core, tops cut off) in dish and bake for 10 minutes.

In a pan, on medium high heat, cook the peppers and onions until softened about 3-4 minutes with 1 Tbs olive oil. Then add ground beef and cook for another 10 minutes. Add Voodoo seasoning and sea salt. Stir frequently until liquid has been absorbed and beef is thoroughly cooked and browning. Remove from heat.

Spoon mixture evenly into softened bell peppers. Return them to the oven for another 10 minutes or until the peppers are cooked (wrinkly) and beef is brown. Serve and enjoy!
